I was in the mood for Mexican quesadillas, but I wanted to make a healthier version. So, I decided to forego the red meat (steak) and try using veggies like black beans, peppers, and onions. Surprisingly, I didn’t even miss the meat when I had these quesadillas. So, here’s the recipe:
This recipe was inspired by Gimme Delicious
Ingredients
- 1 Tbsp of Olive Oil
- 1 Cup of Bell Pepper, diced
- 1 Cup of Black Beans
- ½ Cup of Corn
- ½ Cup of Onion, diced
- 1.5 Tsp of Cumin
- 1.5 Tsp of Chili Powder
- 4 Flour Tortillas
- 2 Cups of Shredded Cheese
Instructions
- Heat oil in Medium pan over medium high heat
- Add bell peppers, black beans, corn, onion, and seasonings
- Cook for 3 to 4 minutes or until the bell peppers and onions have softened
- In a clean skillet over medium heat
- Add Tortilla, topped with veggie mixture and cheese. Place another tortilla on top and cook
- Flip once until golden brown on both sides (about 3 minutes pure side)
- Enjoy

I have decided to start posting the different dishes and recipes that I cook each week for two reasons. Firstly, I have been told that I am a good cook, and secondly, I am tired of searching for recipes online, only to have to navigate through excessive content and pop-up ads to get to the ingredients and cooking steps.
