When I first made this recipe, it was with chicken. However, I thought about how I could make it a little bit healthier for the future. I had some cans of chickpeas or garbanzo beans (depending on where you live), so I decided to look up this chickpea tikka masala recipe. Let me just say, served over a bed of rice, it was definitely a comforting dish. So, here’s the recipe:

Ingredients
- 2 cans of Chickpeas, drained
- 1 can of Fire Roasted Tomatoes
- 1 Red, Yellow or Orange Bell Pepper, diced
- 1 Jalapeno Pepper, diced
- 1 Tbsp of Lemon Juice
- 2 Cups of Tomato Puree
- 1 Jar of Tikka Masala Sauce
- 1.5 Tsp of Garlic powder
- 1.5 Tsp of Onion Powder
- 1.5 Tsp of Black Pepper
- 1.5 Tsp of Paprika
- 1.5 Tsp of Cumin
- 1.5 Tsp of Turmeric
- ¼ Tsp of Cayenne Pepper
- 1 Tbsp of Olive Oil
Instructions
- Heat Oil in Skillet over medium heat
- Add Onion and Saute for about 3 minutes
- Add Seasonings and Saute for another minute
- Transfer to Slow Cooker
- Add Chickpeas, bell pepper, jalapeno, tomato puree, fire roasted tomatoes and seasonings
- Cook on high for 4 hours
- Once done add lemon juice and stir until well combined.

I have decided to start posting the different dishes and recipes that I cook each week for two reasons. Firstly, I have been told that I am a good cook, and secondly, I am tired of searching for recipes online, only to have to navigate through excessive content and pop-up ads to get to the ingredients and cooking steps.
