This is another side dish that I made for my girlfriend for her birthday. Making mashed potatoes can be one of the easiest things to make. But when you add cheese, bacon, and green onion it turns it into a five star dish. Hope you enjoyed this dish half as much as I did.

This recipe was inspired by BE GREEDY EATS by Aaron Dodson on Pinterest. 

Ingredients 

  • 3lbs Red Potatoes, cut into cubes 
  • ½ cup Butter
  • 1 cup Heavy Cream 
  • 1 Tbsp Minced Garlic 
  • 1 cup Sour Cream
  • 6 slices Cooked Bacon, Chopped
  • 2 cups Cheddar Cheese 
  • 2 cups Pepper Jack Cheese 
  • 1 bunch Green Onions, Chopped
  • 1 Tbsp Garlic Powder 
  • 1 Tbsp Onion Powder
  • 1 Tbsp Black Pepper 

Instructions

  1. Preheat Oven to 350 degrees 
  2. Add cubed potatoes into large pot with water and bring to boil 
  3. Boil potatoes for 15 minutes or until fork tender 
  4. Add butter, heavy cream, and minced garlic to pot on low until the butter is melted and the cream is warm. 
  5. Add the potatoes to bowl and mash until they are crumbly 
  6. Add the butter and cream mixture to the potatoes and mix until smooth
  7. Season to taste
  8. Add 1 cup of cheddar cheese, 1 cup of pepper jack, half of the bacon, and half of the green onions. Mix until blended well. 
  9. Put potato mixture until a baking dish and top with remaining cheeses and bacon
  10. Bake for 20 minutes or until the cheese starts to brown
  11. Remove and garnish with green onions

I decided to start posting the different dishes and recipes that I cook during the week because one, I’ve been told I’m a pretty good cook. And two, I’m tired of finding recipes only to have to scroll through all of the unnecessary stuff to get to the ingredients and the steps to make the food. Not to mention the mountain of ads that pop up. 

The recipes that I post on this blog are all recipes that I have cooked. So I will make sure I let you all in on what I do to the dish to enhance its flavors and truly make it one of a kind.
